Santusa, known for her cooking skills, gave us a cooking lesson yesterday. She is our 'mother' at the volunteer house. She loves to look after us, make lunches and cakes for us. We are getting an orange cake today!!!!! She taught us how to cook two Peruvian dishes - quinua soup and aji de gallina (shredded chicken cooked with a delightful sauce of milk, onions, chillies, garlic and cheese, served on rice). I am not sure whether we can replicate them. There were so many ingredients and preparation work involved in cooking these two dishes. Quinua is a form of grain grown by the Incas in the ancient times. The Inca kings believed that Quinua gives them strength. They are packed with protein and apparently it is one of the healthiest and most nutritious grains around. You can get them from health food stores in Australia.
